After the success of Osteria del Cocotrippone, active since 2006, Filippo opened the new location of the trattoria just a few steps from the original one, maintaining a connection with the past while looking toward the future. Chef Baldini honed his skills in some of the most renowned restaurants in Florence, including La Maremma, Il Barroccio, Grand Hotel Vallombrosa, and Panacea del Bartolini. He collaborated with chefs such as Andrea Alimenti and Fransis Schasher, the first awarded chef at Enoteca Pinchiorri. His career reached its peak in 1997, when he managed a Michelin-starred restaurant, followed by experiences at Divinus and I’ Polpa.
